Sago strainer plays a vital role in traditional sago processing as sago is a staple food for the people of Papua. The process, known as pangkur sagu or tokok sagu, involves extracting sago starch from the pith of the sago palm. A mixture of water and shredded, moist pith is squeezed, allowing the starch to flow through a strainer made from coconut fiber. This strainer, placed near the head of the trough, filters out inedible cellulose fibers. The starch-rich water then flows down to this container, where it collects. At the end of the container is a carved figure of a man wearing a nose ornament (bipanew), symbolizing the cultural identity of the Dani people of Papua
